Briskets are best suited to the oven or smoker and we like to keep a comfortable level of humidity even with their higher fat covering. You can choose to trim the fat but we suggest cooking with a lot of it on as it will largely melt and help increase the flavour. They do shrink slightly the longer you smoke or bake them, so we suggest a larger size than what you think you might need. Slice it as a roast or pull it apart and cover in your favorite sauce. Just remember that the key to a brisket is patience! Low temperature and slow cooking will give you the very best results. The Medium size brisket will feed 4 - 6 people. The small brisket is perfect for 2 - 4 people. XL Wagyu briskets are available from time to time, so check in with us to see if we have any available.   Sizes May Vary Depending On Stock
