Sirloin Tip is cut from the hindquarters, adjacent to the sirloin. It is also called "Round Tip Roast". This is a nice roast for Medium or Medium Rare (140F - 145F internal temp) cooking and can also be braised or stewed, as it can be a leaner cut of beef. Lots of flexibility with this roast!
