Lamb Shoulder Chops are one of the lesser known and utilized cuts. To get the most out of your shoulder chops, braise them or even pan fry or grill them. They can be a slightly tougher cut than traditional Lamb Chops, so you can also marinate them to increase the tenderness prior to cooking. There are so many ways to cook these chops and can be eaten similar to steak (medium rare, medium, well-done, etc.). As with steak, be sure to let them rest for a couple of minutes prior to digging in. Weight and size may vary slightly.
