Petite Tender
Petite Tender is cut from the Shoulder (Chuck) of the beef.
If you appreciate a good Tenderloin, you'll love this as a cheaper alternative! This particular cut is a cross between a roast and a steak and can be cut into Medallions or cooked whole as a mini roast. It is lean, juicy, flavourful and TENDER, as the name implies. For most, one of these Petite Tenders will feed 2 people, making them a really economical option for a premium, hard-to-find cut.
This beautiful cut comes from Gemstone Grass Fed and Finished Beef, near Gem, AB.
One steak is approximately 350 grams (12 oz).
Size may vary, based on each particular animal. Each steak is the full cut and is also produced by hand, which can cause some variation in size.
Recommended Cooking:
For a Roast:
Salt/pepper the outside and brown all sides in a hot frying pan. Season with other rubs/spices, as desired. Place in the oven at 400F for only a few minutes until the internal temp has reached approximately 145F for a Medium Rare finish for 150F for a Medium. Rest for 5-10 minutes and slice thinly before serving. This also makes a great appetizer or part of a tasting platter!
For Steaks:
Cut Roast into Medallions, approximately 1 - 1.5 inches thick. Season as desired and Grill just like any other steak until desired doneness is reached.
