Picanha Roast

Picanha Roast, also called "Coulotte" or "Top Sirloin Cap", is a gorgeous roast with a heavy fat cap. Score the fat cap in a crisscross pattern but leave it on through the cooking process. It will add beautiful moisture to this already decadent cut. Add your seasonings in the score lines and place this beauty in the smoker or oven. Use is as a roast or cut it into steaks, it's up to you! Minimum of 1.2 Kgs. Roasts are hand-cut and size may vary.
