Thaw Arctic Char in either in the Fridge overnight or in a cold water bath. A cold water bath takes approximately 30 - 60 minutes to full thaw. Allow Fillets to come to room temperature. Preheat the oven to 380 Degrees F.
Place Fillets skin side down on a tinfoil lined baking sheet with an edge that will hold in the melted butter and seasonings. Usually a 1/2 - 3/4 inch edge is enough. Slice two 1 inch long slits in the fattest part of the fillet, approximately 1/4 inch deep. These will act as a catch for the butter and seasonings to penetrate deeper.
Mix the Kosher salt, pepper, onion powder, garlic powder/salt, dill and paprika until it is well blended. This is enough for 4 Fillets.
Melt the butter and pour over the 2 Fillets. Open the slits and pour the butter directly inside and all over the Arctic Char.
Top with desired level of seasoning. The mixture is enough to coat 4 Fillets. Open the slits you already cut in the top of the Fillets and pour seasoning directly inside and all over the fish.
Place baking sheet with Arctic Char in the oven for 12 - 15 minutes. Desired internal temp is 160F. Cook it too long and you risk it becoming dry.
Rinse the Broccoli crowns and cut into even sized pieces.
Add 1 tsp of cooking oil to a frying pan on medium to medium-high heat. Add washed Broccoli pieces to the pre-heated pan. Add a few Tbsp of water and cover until the broccoli is bright green (only a few minutes).
Squeeze 1/2 of a lemon into the broccoli and add Kosher Salt to taste (approximately 1 tsp). Cook and stir frequently for another couple of minutes. Broccoli should be cooked to al dente and always be bright green. Overcooked broccoli will start to become dull in color.
Optional pairing to this dish is some roasted Sweet Potato with a simple toss in cooking oil, salt and pepper. Roast in the oven until soft. Arctic Char can be eaten as pictured on its own or used to top a salad or any number of other meal options. It is fantastic in flavour and texture and is incredibly healthy. Cheers!
