Look for our video on TikTok and Instagram to show this soup being made! Prep veggies by evenly chopping celery and carrots. Dice onion and coarsely chop the garlic.
Heat a large soup pot on medium/high heat, and add 2 - 3 tbsp. of oil. Add garlic and onion, stirring constantly until translucent. Add carrots and celery, following by enough water to barely cover the vegetables.
Season with Salt, Pepper, Dill and any other herbs you may like to add. Allow veggies to simmer. This will also really help the flavours to come together.
When vegetables have softened, add broth, more water and the Orzo pasta. Bring back up to a boil and simmer until Orzo is cooked through. Add water as needed to prevent the soup from becoming too thick.
Add pre-cooked, shredded chicken. When soup is done, top with Green Onions. Adding them right at the end will help maintain their freshness. Serve, garnished with fresh dill. Enjoy!
