Chop veggies into large Chunks. (No need to chop the mushrooms or cherry tomatoes)
Cut Tenderloin Ends into 1.5 Inch chunks.
Rotate the pieces onto the pre-soaked wooden Skewers, constantly alternating the veggies and meat chunks. I aim for about 3 pieces of beef per skewer.
Once all the skewers are completed and laid together on a baking sheet, run a light drizzle of dressing across the top from 1 end to the other, lightly coating the top side. Sprinkle with salt and pepper. Flip the skewers over and repeat.
Place on the hot grill for a 3-5 minutes per side. I like to pull them when the steak bites are approximately 145F inside. Rest for a couple of minutes to cool slightly.
