Refreshing and delicious all summer long! This makes the perfect side-dish to any fish, pasta or chicken dinner. It also work great with a juicy Ribeye, Striploin or Tenderloin steak. If you want to change up the veggie, try this recipe with Broccolini or Asparagus instead. Wash the Broccoli crowns and cut into bite-sized pieces. Uniformity is always something to strive for as the smaller pieces will cook faster than the larger ones.
Heat a frying pan to med-high heat and add just enough water in the bottom to steam the broccoli. Usually just a very thin layer will do. Add the broccoli to the pan, pour over lemon juice and sprinkle the Kosher salt. If you'd like to add some garlic - go for it. Garlic compliments the lemon well and adds another level of great flavours. One clove is plenty.
Cover and allow the broccoli to steam until it is bright green. Broccoli is best cooked al dente (not all the way cooked through). If your broccoli starts to lose that vibrant green color, it's becoming over cooked. Uncover when it is vibrant green, stir and allow any excess water to boil off. That's it!! The perfect, super easy, healthy and delicious side dish that goes with almost anything. A little tangy, a little salty and perfect for summer.
