St. Louis Pork Ribs with Coffee Rub

Ingredients:

  • St. Louis Berkshire Pork Ribs - 1 rack - thawed

  • 1/4 cup of Kosher Salt
  • 2 Tbsp Cracked Black Pepper
  • 2 Tbsp Medium Roast Ground Coffee
  • 1 Tbsp Light Brown Sugar
  • 1/2 tsp Ground Cumin
  • 1/2 tsp Unsweetened Cocoa Powder
  • 1/4 tsp Chipotle Chili Powder

Directions:

    Combine Ingredients into a large bowl.

    Lay foil on a tray and place ribs on top. Pat ribs dry with paper towel on both sides. Split the rub in half and apply to one side of the ribs, keeping it even and pressing down firmly to help it stick. Roll ribs over and repeat on the other side with the other half of the rib rub.

    Wrap tightly in the foil and place in the oven or on the smoker at 300F for 90 minutes. Check that the safe internal temperature for pork has been reached (between 160 - 170F) and remove from the oven/smoker.

    REST! Allow the ribs to rest in the foil for at least 10 - 20 minutes. This will lock in so much of the moisture. See Recipe for Spiced Rum BBQ Sauce and use as a dipping sauce for these delicious pork ribs!
