Use a fork and poke holes in the potatoes. Microwave the plate of potatoes for 5 minutes. Flip them over and microwave another 5 minutes. Remove potatoes from microwave and allow them to cool enough to handle.
Meanwhile, cook the bacon bits in a frying pan. Pour bacon out onto a plate covered in paper towel to help soak up any extra bacon grease.
Scoop out the insides of the potato, leaving a thin layer of potato in the skin. Put the potato insides into a heat-safe bowl and use an electric mixer to mash the potatoes with the milk, butter, salt, pepper, shredded cheese and cooked bacon bits. The potatoes should be fluffy and soft. Mixing while the potatoes are still hot will also help the cheese to melt and incorporate better. Check for seasoning at this stage and add more, if desired.
Sprinkle salt inside the potato skins. Scoop the blended filling back into the skins.
Top with more shredded cheese, bacon bits and green onions. Place onto a baking sheet.
Use the Broil setting (500F) and bake the potatoes for just a few minutes in the oven, just until the cheese melts and top begins to crisp (2 - 4 minutes).
Serve with Salsa, Sour Cream or whatever your favorite condiments might be. These are great for sharing as a party appetizer or as a side dish to your regular dinner. Enjoy!
